FROM THE METHOW VALLEY
Our orchard and cidery rest between Mount McClure and the banks of the Methow River near Twisp, Washington. We only press certified organic Washington apples, selected from our trees and other local orchards. We do not add sulfites, preservatives or sugars. To retain the natural flavors of ripe fruit, we do not filter our cider. We ferment slowly at cool temperatures, preserving sugar for our sweeter ciders by halting fermentation, rather than using additives. Most of what we do is traditional cider making, but some of our methods are unique...Sixknot is the result.
